Hokkaido Hotate Age Misaki Ankake

Our first highlight is inspired by the natural flavours of northern Japan. For this dish, we present Hokkaido ankake recreated in unique Misaki style, crowned by a lightly-fried hotate scallop that is crispy yet juicy. In our rendition of this classic Hokkaido dish, a careful mix of vegetables is simmered in a starchy broth, producing a refreshing combination of mild bitters and umami.


Mentaiko Yaki Inaniwa Udon & Kani Age

Our next highlight is a fusion of Japanese and Chinese cuisine. For this dish, we use Inaniwa Udon, renowned for its thin, smooth and springy texture, stir-fried with mentaiko and vegetables to impart a flavour reminiscent of wok hei in Chinese cooking. We top off with Kani Age (deep-fried soft shell crab) for a satisfying crunch.
